The Spicy Thai Tuna is one of my favourites because of the flavour. Very little is required to complete a meal because of its flavour palette.

How to make Spicy Thai Tuna Taquitos?

I love cooking! more-so for others than myself but even I prefer to have my meals, quick, easy and delicious. If you look at most of the recipes on my blog the difficulty level is often easy. The key ingredients are spicy thai tuna, flour tortillas, and cheddar cheese. These ingredients play a key role to this spicy thai tuna taquitos dish.

Start by sautéing onion, garlic, all purpose seasoning and tuna for a few minutes then add sweet corn for a delicious crunchy bite, once finished set aside. Heat oil in a deep pot for deep frying. While the oil heats prepare your taquitos.

Layout your tortilla and start assembling the stuffing. Top with tuna, jalapeños and sprinkle with cheese. roll the tortilla tightly but gently and secure with a toothpick. Fry 2-3 taquitos in the pot until golden brown on all sides. Transfer to a plate with paper towel to absorb excess oil and serve shortly after.

Whats a good occasion for Taquitos?

This Spicy Thai Tuna Taquitos is best consumed quickly so breakfast and lunch would be better options. I recommend a weekend breakfast that allows for more time to prepare comfortably and allows the children or friends to get involved. Cooking together can be a lot of fun and a great bonding experience.

If tuna is not your thing there are many options that could substitute in this recipe. Try shrimp, sausage or chicken for a lunch option or eggs and bacon (minus the corn) for a more traditional breakfast spin on it. Whatever option you choose this recipe is a spicy winner.

Ingredients

  • 2- 142g cans Spicy Thai Tuna

  • 1 – Can Sweet Corn

  • 1 – Small onion chopped 

  • 1 tsp. minced garlic

  • 1/2 cup cheddar cheese

  • 2 tsp. Chopped jalapeños 

  • 8-10 Flour Tortillas 

  • Toothpicks

  • Vegetable Oil

  • 1 tsp. All Purpose

Directions

  • Heat a large pan on medium heat. Add tuna, onion, garlic and sauté for 3-4 minutes. Add corn and cook for another 2 minutes then remove from heat. 
  • Take a deep pot, add vegetable oil and heat on medium-high.
  • On a cutting board lay out your tortillas for easy access. Add a little tuna mixture to each tortilla. Top with jalapeños, cheese and roll the tortilla. Secure the tortillas with toothpicks to keep them closed. 
  • When the oil is ready carefully add the rolled tortillas to the pot, 2-3 at a time depending on the size of your pot. Gently turn while frying to evenly brown all sides. Fry each batch for 4 minutes.
