This Cajun Salmon with Honey Mustard recipe is a winner. Its been two years since I made a solid effort to add more seafood in my diet. Shrimp has always been on the menu however I am cooking salmon more often now. My love for salmon was very low because I mostly ate it at restaurants and it was always dry and flavourless. Little did I know, that I could make it much better at home. My first attempt at cooking salmon worked out perfectly. I made Salmon in Coconut Sauce with Callaloo and it was a true chefs kiss. I will save you the story of the time I didn’t label my food and ate salmon after it went bad. Strangely it tasted and smelled great but it was definitely awful after.

The best way to prepare Salmon.

Like most Jamaican cooks and chefs will tell you, its important to wash your meat, fish or seafood. By ‘wash’ I mean rinse the fish with vinegar or lime and water as this cuts the raw smell and taste and replaces it with a fresh citrusy smell. Once you have washed and rinsed the salmon its important to drain all the water and using paper towel pat dry the salmon to absorb the excess water. Be gentle so that you keep the form of the salmon. Pour a little extra virgin olive oil over the salmon and spread the oil on all sides with your hands.

Simple seasonings go a long way with Salmon. Depending on the recipe, salt and black pepper will be your base. However, all purpose, paprika, an herb blend, seafood blend or Cajun seasoning works really well too. If you are new to cooking I recommend working with a nonstick pan as this will simplify the process and almost guarantee that your salmon will flip successfully. The pot should be hot but not smoking, before adding the salmon that you will place skin side down. Salmon cooks quickly so only three to four minutes on each side is required. You should have a perfectly browned salmon steak.

There was no better sauce for my Cajun Salmon with Honey Mustard. It feels like such a classic pairing. The sweet and creamy meets the bold and spicy Cajun flavour of the salmon. I had intentions of making a sauce from scratch but decided to veto that idea when I found the most delicious salad dressing at the supermarket. It was a bottle of dairy free, vegan Honey Mustard dressing from the brand Daiya. I was in love! Whether its a drizzle or a healthy dollop, that dressing truly completes the recipes. Enjoy my Cajun Salmon recipe with jasmine rice, mashed potatoes or a bed of steamed broccoli and vegetables.

Perfectly cooked Salmon with a bold Cajun Flavour with creamy honey mustard.

Ingredients

  • 4 Salmon Steaks

  • 3/4 tsp. Salt (Pantry Item)

  • 1 tsp. Cajun Seasoning (Pantry Item)

  • 1/2 tsp. Black Pepper (Pantry Item)

  • 3 tbsp. Extra Virgin Olive Oil (Pantry Item)

  • Honey Mustard Sauce or Dressing

Directions

  • Rinse Salmon with vinegar and lime juice and pat dry with a paper towel.
  • Pour 1 tbsp. olive oil over the salmon and season with salt, pepper and Cajun seasoning on both sides.
  • Heat the remaining oil in a large non stick pan on medium until hot.
  • Place the salmon steaks skin side down in the pot and cook for 4 minutes on each side until golden brown.
  • Drizzle honey mustard sauce over the salmon and serve hot with Jasmine rice, mashed potatoes, steamed vegetables or a salad.
