Tasty, Spicy Sausage Fried Quinoa- who needs takeout?

You wont find this on the menu of your favourite local Chinese restaurant. However, when you’re craving rice that you shouldn’t have then there’s no harm in mixing things up. The fat and flavour of the jerk sausage is so good, who cares that its not rice? Try your hand at this faux fried rice tonight.

Ingredients

  • 1.5 cups dry Quinoa

  • Roughly a cup (8.25 oz) chicken stock

  • 3 Jerk Sausage links, chopped to bite size.

  • medium onion, chopped (Pantry Item)

  • 5 cloves Garlic, minced (Pantry Item)

  • 1 stalk scallion (Pantry Item)

  • 1 tbsp. Soy Sauce (Pantry Item)

  • 1 tbsp. Butter or margarine (Pantry Item)

  • 2 Eggs (Pantry Item)

  • 1 cup frozen mixed vegetable

  • Salt and pepper to taste (Pantry Item)

Directions

  • Cook Quinoa as directed on the packaging. I used part chicken stock and part water. You can use all chicken stock.
  • Crack 2 whole eggs, season with salt and pepper and whisk. Heat 1 tbsp. oil in a frying pan on medium heat. Scramble the eggs then set aside.
  • Add 1tbsp. oil to the same frying pan on medium high heat. Add onions, garlic and sauté for 1 minute then add the sausage. Stir fry until onions are soft.
  • Add mixed vegetables and sauté for another 2 minutes.
  • Add your quinoa and stir fry until it heats through.
  • Add soy sauce, scallions and eggs and mix well.
  • Season with salt and pepper and add a tbsp. of margarine or butter.
  • Serve hot.

Notes

  • I used overnight quinoa to give me a fluffier stir fry instead of clumps.
  • Use your favourite sausage. Mine was Bad Dawg Jerk Sausage.
