This dish is one of my absolute favorites because you cant go wrong with Garlicky goodness. Works great as a meatless dish or you can add your favorite protein.

I whipped this up for a quick Friday night dinner that I am sure you will enjoy.

Ingredients

  • 6 cloves of garlic (Pantry Item)

  • 1/4 cup Honey (Pantry Item)

  • 1/4 cup water

  • 2 tbsp. vegetable oil (Pantry Item)

  • 1 tbsp. cornstarch (Pantry Item)

  • 1/4 cup scallion (Pantry Item)

  • 3 blocks of Instant Noodles ( find in the Asian aisle)

  • A head of Broccoli

  • 1 medium red bell pepper

  • small can of sweet corn

  • 1/4 cup soy sauce (Pantry Item)

  • Salt & pepper to taste (Pantry Item)

  • 1 medium scotch bonnet pepper- minced (Pantry Item)

  • Red pepper flakes or all purpose seasoning (optional)

Directions

  • Boil noodles as directed and then set aside. You can rinse in cold water to stop the noodles from cooking.
  • Chop broccoli to florets, julienne bell peppers, mince garlic and scotch bonnet pepper, open your can of sweet corn and cut your scallion to small rings. 
  • Place all these ingredients separately in their own container.
  • Combine garlic, soy sauce, water, scotch bonnet pepper, Honey, 1 tbsp. oil and cornstarch. 
  • In a large wok or frying pan ( use what you have) add remaining tbsp. oil. 
  • Add broccoli and stir fry for 2 minutes, then add the bell peppers and ½ cup sweet corn. Season with salt, red pepper flakes or your favorite vegetable seasoning. 
  • Stir fry for another 2 minutes then add ⅓ of the garlic sauce, mix and add a handful of the noodles making sure to mix well. 
  • Repeat this process until you have successfully added all the noodles and coated with the sauce. ( roughly 5 minutes) 
  • Serve Hot and garnish with scallions.
