Spicy Chicken Quinoa…. A delicious Bowl of sweet heat!

I love my food spicy. Sometimes I go overboard but I just love the heat and the flavour it brings to a dish. This quinoa bowl is no different. It really brings the flavours together.

I use quinoa as a healthier alternative to rice. On its own I find it boring but the more you add to it the better it gets. Try this spicy recipe for a bowl of flavour, heat and tasty goodness.

Ingredients

  • 1 cup yellow sweet pepper, julienne

  • 1 small red onion, diced (Pantry Item)

  • 1/2 cup sliced red onions (Pantry Item)

  • 2 tbsp. garlic, minced (Pantry Item)

  • 1 scotch bonnet pepper, minced (Pantry Item)

  • 2 lbs. deboned chicken thighs

  • 1 cup dry quinoa

  • Salt and pepper to taste (Pantry Item)

  • 1 tsp. all purpose seasoning (Pantry Item)

  • 1 tbsp. Soy sauce (Pantry Item)

  • 1 tbsp. vegetable oil (Pantry Item)

  • 1 cup black beans

Directions

  • Heat oil in a pot for roughly a minute on medium heat.
  • Sauté 1/2 the garlic and yellow onions for 1 minute then add chicken thighs and sauté for 5 minutes.
  • Add the rest of the yellow onions, garlic along with the scotch bonnet pepper.
  • Cover and cook for 10-15 minutes or until cooked.
  • In a sauce pan, cook black beans with 1 tbsp. margarine or butter and season with salt to taste for 5 minutes then set aside.
  • In a small frying pot sauté red onions and yellow bell peppers for 3- 5 minutes in 1tsp vegetable oil. Season with salt and pepper flakes.
  • Arrange your bowl the way you like.

Notes

  • Do not over cook the red onions and bell peppers. They are ready when the onions have darkened.
  • Add enough water to the chicken so that it stays moist but not too much that it thins the gravy/ sauce.
  • Enjoy with a spoon or a fork, I wont judge.
