This Ham & Eggs Breakfast Burrito is a sure way to start your day off right. They say breakfast is the most important meal of the day yet its the one I struggle with the most. A big part of that is probably my affinity for sleeping in. So, whenever I can make something that’s really quick, very filling yet still delicious, its a definite win.

Super Simple ingredients.

Now that I have been blogging all my meals and recipes I am beginning to realize that I often use some same key ingredients in a lot of the dishes. You could argue that it means all the food tastes the same but the way I see it, these are probably the better herbs and spices that help to compliment and bring out the natural flavours of whatever I am preparing.

I have also noticed that the less ingredients included in the entire meal, it can create such a simple yet refreshingly light and delicious meal. No bloating or heart burn just nourishment. This Ham & Eggs breakfast burrito reminds me of that. Our primary ingredients are eggs, flour tortillas, cooked chub ham, fresh kale, salt, pepper, mayonnaise, coconut oil and a sprinkle of a little this and that.

How to make Ham & Eggs Breakfast Burrito?

Did I mention that this is really easy? Well let me say it again, this recipe is so easy you’ll be eating in a jiffy. Toast your tortillas first, this is how quickly things will be ready. Dice your ham and sauté in a frying pan with coconut oil until nice and brown, bringing out the flavour of the ham. You’re going to scramble the eggs in the same pot. Move the ham to the side of the pot and pour in your already whisked eggs and scramble to your liking. Next up is layering your toppings on your toasted tortilla, then wrap it up, cut it and enjoy.

How to get some additional Flavour?

I went with a lighter more fresh burrito but don’t let that stop you. There’s so much more that can work with this to really bring out the flavour. If you’re not big on ham you can try bacon, sausage or avocado for a meatless option. To add a little more excitement you can add sweet corn and back beans. For a fresh spicy bite you can add diced bell peppers or jalapenos. As for the sauce or final topping, zesty ranch is a good choice, cheese is a classic and for a little heat, siracha or Salsa Verde will turn it up a notch.

Ingredients

  • 2 Eggs (Pantry Item)

  • 1 cup Diced Cooked Ham

  • 2 Tortilla Wraps

  • 1 cup Fresh Kale

  • 1 tbsp. Mayonnaise (Pantry Item)

  • 1 tbsp. Coconut Oil (Pantry Item)

  • All purpose Powder (Pantry Item)

  • Red Pepper Flakes (Pantry Item)

  • Salt & Pepper, to taste (Pantry Item)

Directions

  • Season eggs with salt and pepper and whisk.
  • Heat a large pot and toast tortilla on each side for a minutes then remove from pot and set aside.
  • In the same pot add oil, ham and a sprinkle and a sprinkle of all purpose and sauté until brown.
  • Push the ham to the side of the pot and on the other side add eggs and scramble. When cooked remove both from the heat.
  • Spread mayonnaise on Tortilla then top with kale, eggs, ham and sprinkle with red pepper flakes. Fold in the sides of the tortilla and then roll. Cut the tolls in Half and then serve.

Notes

  • You can add other sauces such as dressing, ketchup or mustard.
