Rigatoni in meat sauce, this combination hits all the spots. The meat sauce reminds me of spaghetti and meatball. The filling al dente rigatoni makes it taste like ravioli. The two together is just absolute perfection. It’s a meal for everyone and its very quick and easy to make. A full bodied meal in a jiffy.

I am not a big fan of tomato based sauces so I have always gravitated to the creamier ones like Alfredo. However, this past year I’ve had to stay away from dairy because of what appears to be an allergy. So as heartbroken as I am to say goodbye to dairy, I must move forward. I am now working on my relationship with tomato sauces. It’s a work in progress however this recipe has won me over. Finding a balance with all the key Ingredients is key. The fatty goodness of the beef, the acidity of the tomato sauce adding a bit of sweetness and the strong herb flavours.

How to make Rigatoni In Meat Sauce?

This isn’t a fancy meal and nothing says comfort like simple delicious flavors. A few ingredients go such a long way. Beef mince, rigatoni pasta, roasted garlic tomato sauce, salt, pepper, chili powder, thyme, sage, basil, garlic, onion is all you need.

Start by seasoning the beef mince with the herbs and spices. On medium heat with oil, sauté the onions then add the beef mince and brown for a few minutes. Cover the beef and cook for 15 minutes. While the beef cooks bring a large pot to boil and then add the pasta. Once the pasta is cooked drain, rinse with cold water, drain again and set aside.

Add the tomato sauce to the pot with the beef, then add sage, basil and sugar and cook for an additional 15 minutes until sauce starts to thicken. Gradually add the rigatoni to the pot mixing as you go to ensure it’s evenly distributed. Serve hot for your family and enjoy.

Ingredients

  • 1 tsp. Salt (Pantry Item)

  • 1/2 tsp. Black Pepper(Pantry Item)

  • 1/2 tsp. Chili Powder (Pantry Item)

  • 1/2 tsp. Dried Thyme (Pantry Item)

  • 1/2 tsp. Sage (Pantry Item)

  • 1/2 tsp. Basil (Pantry Item)

  • Beef Mince, Roughly 1/2 lb. (0.295kg)

  • 3 cups Roasted Garlic Tomato Sauce

  • 3 Cups Rigatoni Pasta

  • 2 tbsp. Vegetable Oil (Pantry Item)

  • 1 Small Onion chopped (Pantry Item)

  • 1 Scotch Bonnet Minced (Pantry Item)

  • 1 tsp. Minced Garlic (Pantry Item)

Directions

  • Season beef mince with salt, thyme, chili powder, black pepper and garlic.
  • Heat vegetable oil on medium heat then add onions and sauté until fragrant. Then add the beef mince to the pot. Sauté for a few minutes until brown and make certain to break up the beef into smaller pieces. Add a little water, maybe half cup, cover the pot and let cook for 15 minutes. Top up with a little more water if its drying out before ready.
  • While the beef cooks bring a large pot of salted water to boil, add the pasta and cook according to package instructions or al dente. When Rigatoni is cooked, drain hot water, rinse with cold water to stop the cooking process and then drain again and set aside.
  • Back to the beef. Pour the tomato sauce in the beef pot and add, scotch bonnet pepper, sage, basil, sugar and mix well. Cover and let cook for another 10-15 minutes until sauce starts to thicken. Gradually add the rigatoni to the meat sauce and mix well.
  • Serve hot and enjoy.

Notes

  • You can top with Parmesan Cheese and eat with Garlic Bread.
  • When cooking the beef you want to keep it from drying it out but don’t add to much water. Its better to add the water more frequently than risk boiling the beef.
