The One Pot Burrito is amazing. Everybody loves a one pot. Let’s really look at this closely. One pots are usually delicious because you’re combining multiple ingredients to create a compounded flavourful bite. They’re often quick. I can think of a few stews that takes quite awhile but generally speaking you’re cooking with ease and will be eating in very little time. One pots are no muss no fuss. Who doesn’t love cooking with minimal cleanup? A one pot is all our prayers answered.

Why the One Pot Burrito?

It didn’t start out as a one pot burrito. Surveying my kitchen while thinking what to make for dinner I found myself with most of the ingredients for a burrito. Inspired by a burrito I went with it. The key ingredients are beef mince and Black beans. These two ingredients will carry the bulk of the flavour. The body is in the rice. Just like the burrito this is what will fill you up and stretch the meal. The feature ingredients are corn and green peas which are optional. I had some leftover and wanted to use it up. I am on a mission to not waste food so I use all that I have at my disposal.

Don’t stop there, top me up!

The best part of this meal is eating it. Seriously though, just like the burrito you get to have fun with what’s on top. This recipe served me as meal prep for 4 meals. Each time I got to try a different topping and I quickly realized the possibilities are almost endless. Excellent choice for toppings are cheese, spicy salsa, guacamole , spicy ketchup sauce and I had a side salad. Whatever your favorite additions are for your burrito, it will go well with this recipe.

Let’s talk about that spicy ketchup for a minute. I know, it doesn’t sound that interesting but sometimes it’s the most unassuming things that make you go wow. I mixed ketchup with a scotch bonnet hot pepper sauce and drizzled it on top and it was sweet heat, delicious. There’s so much fun to be had with this dish, for you and the family. To take it a step further you could add it to flour tortillas and officially make burritos.

Ingredients

  • Beef Mince, 0.275kg

  • 1 cup uncooked Jasmine Rice (Pantry Item)

  • 1/2 cup canned corn

  • 1/2 cup black beans

  • 1/2 cup green peas

  • 1/2 tsp. Black Pepper (Pantry Item)

  • 1/2 tsp. Garlic Powder (Pantry Item)

  • 2 tbsp. Vegetable Oil (Pantry Item)

  • 1 Small Onion chopped (Pantry Item)

  • 2 Cloves garlic , minced (Pantry Item)

  • 1 1/2 tsp. Salt (Pantry Item)

  • 1tsp. Soy Sauce (Pantry Item)

  • 1/2 tsp. All Purpose (Pantry Item)

  • 1 1/2 cup water (Pantry Item)

Directions

  • Heat on medium the vegetable oil in a large sauce pot. Add onions and garlic and sauté until fragrant.
  • Add Mince, salt, soy sauce, garlic powder, all purpose and black pepper and sauté until brown making certain break up any chunks. Cover and cook for 5 minutes.
  • Add black beans, corn, green peas and sauté for 2 minutes. Then add water and washed rice to the pot. Mix to evenly spread the rice and make certain the rice is completely covered.
  • Bring to a boil on medium then reduce heat and cook until rice is ready.
  • Serve hot and with your favorite topping.

Notes

  • Tip: If you have precooked rice, this can work just as well. The flavour level will be high. Add the cooked rice a little later in the process when you know the beef is completely cooked.
