I decided I wanted to have more seafood in my diet because I only eat seafood when I am eating out.

This was my first time cooking salmon. I was told that its very easy to cook but sometimes the easier something is to cook, the easier it is to mess it up. With the cost of salmon so high I was not about to mess this up.

A quick google search led me to a recipe by Laura Rege posted on delish.com and it gave me the general idea on how to cook salmon. This exceeded my expectations in every way possible. Its the beginning of my beautiful love story with salmon.

In the end, I made two variations of this dish. For my second serving I boiled some spaghetti and voila it was an entirely new meal. Enjoy!

Salmon in Coconut sauce with Callaloo…So Easy!

Ingredients

  • 1/4 cup chopped onions (Pantry Item)

  • 2 cloves garlic minced (Pantry Item)

  • Salt and pepper to taste (Pantry Item)

  • 1 tbsp. vegetable oil (Pantry Item)

  • 5- 6 cups shredded callaloo

  • 1/4 cup chopped onions (pantry item)

  • 4 cloves garlic minced (pantry item)

  • 1 yellow scotch bonnet pepper minced (pantry item)

  • 1 lime or lemon juice ( 1 tbsp.) (pantry item)

  • Salt & Black Pepper to taste (pantry item)

  • 2 tbsp. vegetable oil (divided) (pantry item)

  • 3- 5oz Salmon steaks ( roughly a lb.)

  • 2 tbsp. brown sugar (pantry item)

  • 1 cup coconut milk

Directions

  • Cook Callaloo first.
  • Heat 1 tbsp. vegetable oil in a medium sauce pot. Add onion and garlic and sauté for 2 minutes.
  • When fragrant (do not burn garlic) add callaloo, stir and season with salt and pepper.
  • Add a little water to keep it from drying out and steam for 10 minutes or until the Callaloo is cooked.
  • Remove from heat.
  • Season salmon with salt and black pepper.
  • In a large frying pan heat 1 tbsp. vegetable oil on medium high
  • Starting with the skin side up sear salmon for 4 minutes or until golden.
  • Carefully flip the salmon, repeat and remove from heat.
  • Add remaining vegetable oil , chopped onions, garlic and scotch bonnet pepper and sauté for 1 minute.
  • Add coconut milk, brown sugar and squeeze in lime juice.
  • Season sauce with salt to taste and add cornstarch mixture to thicken if necessary.
  • Simmer for 5 minutes, add the salmon steaks and remove from heat.

  1. This tropical twist on salmon sounds delicious. I never thought to pair salmon with coconut before, but you make it look really good. Salmon also tastes very good with greens, so I was happy to see you included greens in the recipe, too. Thanks!
