Say yes to summer with this Bacon Mac and Cheese Hot Dog. I’ve been thinking a lot about my childhood summer days and I’m quickly reminded about all the fun I had. Travelling every summer, making new friends and eating delicious foods. I’ve come to realize that years later I no longer eat those foods and for good reason. Surely I cannot manage all the foods I ate then but they do hold a strong place in my heart. They make me nostalgic for simpler and fun times.

This summer my childhood favourites have been my inspiration for my recipes. One of my favourite food to eat was a hot dog. A nice warm and soft bun with a delicious flavourful hotdog on a hot summer day with a cool refreshing drink. This time around I decided to put another childhood staple in the mix. Presenting the Bacon Mac and Cheese Hot Dog. To say this was amazing is an understatement. I was transported to summer days long past with every bite.

There were so many options I wanted to try. A three cheese dog, hot dog with caramelized onions. Fried hot dog with jalapeño rings. In the end I realized there’s now way I could manage all of that and decided on a simple yet absolutely delicious hot dog. Bacon Mac Cheese dog. Delicious comfort in a roll.

Mac and cheese, fresh and soft burger buns, hotdog sausages and nice streaky bacon with pockets of fat. So lets get cooking.

Bacon Mac & Cheese Hotdog.

Ingredients

  • Bad Dawg Sausages, 4 links

  • Hot Dog Rolls, 4

  • A box of Macaroni and Cheese

  • Butter, 1tbsp. (Pantry Item)

  • Milk, splash ( Pantry Item)

  • Bacon, 2 strips

  • Vegetable oil, 1tbsp. (Pantry Item)

Directions

  • Cook Macaroni according to package instructions. When Macaroni is finished boiling add cheese, butter and milk and mix together.
  • While macaroni cooks, fry bacon on medium heat until crispy and set aside on a paper towel.
  • Add oil to the pot and heat. Add sausage links and cook for 8-10 minutes while turning frequently.
  • Cut open your rolls and butter the inside. Add sausage and top with mac and cheese. Chop the bacon to small pieces and sprinkle on top.
  • Enjoy with your favourite hot sauce.

Notes

  • Using a knife pierce the sausage in a few areas to release any built up pressure.
