You had me at Beef and Potatoes or One pot stew. Everything about that sentence just screams savoury and delicious flavours and a meal that gives you a hug of love. No better meal for our a Thursday meal. Its easy, flavourful and really affordable and more importantly it gives you a hearty serving. There are foods that give e comfort and they often have potatoes in them and probably a good amount of fat. Its safe to say we can check that one off our list.

What will you need?

The basics, ground beef or beef mince. I prefer the mince because it has more fat however if you’re on a diet then go for the ground beef. Potatoes are key to adding bulk to the meal. You wont have this with rice so it provides the carbs and starch needed to complete it. Also Potatoes absorb flavours really well so it will b delicious with the beef. Frozen mixed vegetables. If you have the canned version that’s great too. i went with mixed vegetables because I wanted the variety but in truth you can work with what you have whether that’s black bean, green peas, sweet corn, anyone will work. Creamed crackers. I mentioned that this is a one pot that doesn’t include rice. The intention is that you will eat it like a balanced stew, If you desire something more you can have a few creamed crackers with this. It’s absolutely yummy. Then all you need are your basic pantry seasonings and you’re all set to create a wonderfully delicious meal for you and your family.

How to prepare it?

Start by seasoning the beef with soy sauce and powder seasonings. Then heat a large pot on medium with vegetable oil. Add the onions and garlic and sauté until fragrant then add the beef mince. Sauté the mince making sure to break up the clumps. While the beef cooks peel and cut up the potatoes. Once done add them to the pot and allow them to cook the rest of the way worth the beef. Close to the end you will add he vegetables because they’re already cooked. This meal wont cook longer than 35 minutes. It will be ready when the potatoes are nice and tender, no crunch to it. As usual serve hot, I don’t like cold food so I tend to cook when I am ready to eat.

This meal is great for any of your chalennging days, whether youre low on funds or need a pick me up. Try adding this to your weekly rotatuon and your taste buds wull thank you.

Ingredients

  • Beef Mince, 0.315kg

  • 2 Large Potatoes , cubed

  • Frozen Mixed Vegetables, 1 cup

  • Salt, 1 1/2 tsp. (Pantry Item)

  • All purpose 1tsp. (Pantry Item)

  • Soy sauce 1tsp. (Pantry Item)

  • Paprika, 1stp. (Pantry Item)

  • Onion Powder, 1tsp. (Pantry Item)

  • Garlic, 4 cloves (Pantry Item)

  • Scotch Bonnet (Pantry Item)

  • Vegetable Oil, 2tbsp. (Pantry Item)

  • 1 medium onion, chopped (Pantry Item)

  • 1 stalk scallion (Pantry Item)

Directions

  • Season beef with soy sauce, salt, all purpose, paprika, onion powder and minced scotch bonnet pepper and set aside.
  • Heat oil in a large pot on medium heat. Add garlic and onion and cook until fragrant, around 2 minutes.
  • Add beef, sauté then add 1/2 cup of water, cover and cook for 15 minutes.
  • Wash, peel and cube potatoes. Soak in water to remove starch until time to add to the pot.
  • After the beef has cooked for 15 minutes add the potatoes and cook until the potatoes are ready. another 10- 15 minutes.
  • Add mixed vegetables for the last 5 minutes of cooking.
  • Mix well and serve with crackers.

Notes

  • Do Not let it dry out or burn. periodically add a little water to the pot around 1/4 cup.
