Summer Mango Parfait is a great breakfast option but also an amazing snack or dessert. I squeezed the life out of mango season this year. Safe to say I am sure I overindulged. Summer is almost over and to see it go means saying goodbye to one of my favourite seasonal fruits. I love fruits with strong personalties ( flavours) such as mango, passion fruit and guava just to name a few.

Mango has such a bold and delicious flavour that it brings so much to life. Every bite of this parfait is absolutely yummy. Delicious lightly sweetened granola, creamy vanilla yogurt parfait with thick chunks of juicy mango. This is heaven! This Mango Summer mango parfait will be a hit with the family for a snack and great for breakfast when you have very little.

What’s really fun about this Summer Mango Parfait is that there’s no real recipe. You can add what you like, layer as you like and have fun the way you like. Go crazy with toppings. Whatever your favourite fruit, it will be a great addition. The granola I used is sweetened by honey and had a mix of raisins and nuts. With the yogurt and the mango chunks I had a full flavour profile going with a great mix of textures.

You can try strawberries, bananas, peaches, papaya, dried cranberries, walnuts, almonds, honey, Nutella. There’s a wide variety of ingredients to complement your parfait. If you don’t have a bag of granola handy you can use a crunchy granola bar. Crush it to pieces and layer in your parfait. Alas its time to say goodbye to summer but I am looking forward to my favourite time of year, Autumn. In Jamaica we don’t recognize seasons but its undeniable that things, people and foods are different this time of year. Until then I can’t wait for you to try this.

Ingredients

  • Yogurt

  • Mango slices or chunks, sweet

  • Granola

  • Honey

Directions

  • Take a cup or bowl and add a little yogurt at the base. Top with granola then with fruits and repeat the steps.
  • Complete your parfait with a sprinkle of granola on top and drizzle with honey.
  • Enjoy.
