Simple is sometimes better!

It’s all about the ingredients. Sometimes just a few flavourful ingredients can go a really long way to making the cooking process simple yet flavourful. I often go with the cooked shrimp from the frozen section however I wanted to fry these up nice and golden without worrying that it would over cook. This time I went with the uncooked shrimp that was peeled and deveined. After using this there’s no going back for me.

Breadcrumbs are really important. You will notice that I kept the type of bread crumbs in the name because not just any breadcrumbs will do. Go with the panko breadcrumbs. It’s flaky, crunchy and flavorful. I went a step further and chose the Italian herb however the plain can work just fine.
Season the shrimp with light and simple spices. Salt, black pepper, all purpose and minced garlic and voila, you are ready to start frying.

How to make Panko Shrimp with Lemon Jerk Mayo?

Start by defrosting your shrimp and rinsing with water and a squeeze of lemon juice or vinegar. Using paper towels pat dry the shrimp removing as much water as possible. Season the shrimp with spices such as salt, pepper, all purpose and minced garlic and mix well. Set the shrimp aside and prepare coating mixture. Whisk one egg in a bowl and in a shallow plate add the panko bread crumbs.

Heat a deep pot with oil. When hot, dip the shrimp in the egg mixture then transfer to the plate with the bread crumbs. Toss the shrimp around to ensure it’s properly coated. Gently shake off any excess breadcrumbs and place in the pot with oil. Working in two batches of six or if you have a larger pot you can do them all at once. Fry on each side for 2 minutes. When golden brown remove from the oil and place on a paper towel to absorb the excess oil.

Let’s not forget the sauce. In a small bowl add mayonnaise, jerk seasoning, sugar, lemon juice and mix well. Serve with the shrimp and squeeze some lemon juice on top and enjoy. Now that we have what we need lets get cooking!

Ingredients

  • 12 Large uncooked, peeled and deveined Shrimp

  • 1 cup Italian Herb Panko Bread Crumbs

  • 1 egg (Pantry Item)

  • 2 tbsp. Mayonnaise (Pantry Item)

  • 1 tsp. Walkerswood Spicy Jerk Seasoning (wet)

  • 1 tsp Brown Sugar (Pantry Item)

  • 1/4 tsp lemon juice (Pantry Item)

  • 1/4 tsp Salt (Pantry Item)

  • 1/2 tsp All purpose (Pantry Item)

  • 1/2 tsp Garlic powder or minced garlic (Pantry Item)

  • 1/4 tsp. Black Pepper (Pantry Item)

  • 3/4 cup vegetable oil (Pantry Item)

Directions

  • Rinse shrimp with water and lemon juice. Pat dry with a paper towel to remove excess water.
  • Season with salt, pepper, all purpose and garlic and set aside.
  • Whisk egg in a bowl and add breadcrumbs to a plate.
  • Add oil to a deep pot and bring to heat on medium-high.
  • Working in batches of six, dip the shrimp in the egg and then transfer to the plate with the breadcrumbs and coat on both sides.
  • Transfer coated shrimp to the hot oil and fry on each side for 2 minutes until golden brown.
  • Keep shrimp on a paper towel lined plate to absorb the extra oil.
  • In a small bowl add, mayo, jerk seasoning, sugar and lemon juice and mix well.
  • While hot Serve shrimp with the dip.
