So working from home has been a welcome change. However it does pose some challenges that I never considered before. It takes me 10 seconds to get to work which is great because I am never late. However on the down side it also takes me 10 seconds to get to work.

I am beginning to realize how much ‘me’ time went into the process of getting ready in the morning and the commute to work. Some alone time to think about anything and everything, integral moments to mentally work things out.

These days I roll out of bed and start working and If I am not careful I work all day even pass my usual hours because work is now so accessible. The desk and laptop are just a few feet away.

Another thing I had not considered is the time that goes into making meals now. Far too often I find myself looking up to see that its now 1:30pm and not only haven’t I not eaten but I havent even prepared lunch yet.

This is where meal preps come in. I try to limit my cooking to 2- 3 times per week because after a couple days I need freshly cooked food. Occasionally when I have not meal prepped I find the opportunity to make quick, simple and tasty lunches that’ll cook in just a few minutes. Now that’s my kind of lunch.

I am not a lover of Tuna, I never have been. However I have been trying to making it my own and using tuna in ways that I can appreciate. Add flavour. Naturally I would gravitate to the flavoured Tunas. I Tried a few but the Spicy Thai is my favourite. This Spicy Thai Tuna Pasta recipe delivers and heres why youll love it too.

  1. Its really quick. This dish is so easy, you’ll be eating a great meal in 15 minutes. This saves on time, allowing you to balance fueling yourself and the crazy work day.
  2. Its Simply Delicious. It has just a few ingredients most of which you already have at home but really flavourful. You can enjoy this as a midweek lunch or prepare for your family. However check the heat for the little ones.
  3. Its really affordable. Did I mention that its just a few ingredients and most of them you already have? That’s because its true. This meal is really cost effective, who doesn’t love a good save?

Simply Delicious Spicy Thai Tuna Pasta

Ingredients

  • 2 cans Brunswick Spicy Thai Tuna

  • Spaghetti 7oz

  • 1/2 small onion finely chopped (Pantry item)

  • 3 cloves garlic minced (Pantry Item)

  • Red pepper flakes- sprinkle (Pantry Item)

  • 2 tbsp. Butter (Pantry Item)

  • 1/2 tsp. All purpose seasoning (Pantry Item)

  • Salt & Pepper- optional (Pantry item)

  • 1/4 cup canned corn

Directions

  • Boil Pasta according to package instructions with a sprig of thyme in the water. Drain and set aside when done.
  • While Pasta cooks, heat a pan on medium with butter, onions and garlic.
  • Add Tuna and season with all purpose. Add corn, stir and cook for 5 minutes.
  • Toss in spaghetti a little at a time, mix well and serve hot.
  • Sprinkle with pepper flakes.

Notes

  • Do not let Tuna dry out. Add small amounts of water if necessary.
  • Taste the tuna and add salt if necessary to your liking.
  • Sprinkle a little lime Juice to the tuna. Optional but good.
  • This is more of a dry pasta. if you want more sauce you could consider adding more water or coconut milk.
