This Orange Nut Cake is a little slice of comfort. Very easy to make with just a few key ingredients yet gives such a yummy flavour. You’ll be tempted to eat it all and it does go very quickly but it’s really perfect for sharing. Have a slice with a friend or loved one with a cup of coffee, juice or milk. Surprise someone with breakfast in bed or pack it with lunch for the work day. This sweet treat is sure to brighten any day. 

My first real interest in the kitchen was for baking. I loved baking the sweet goodies every Sunday with my mother growing up. Soon enough, I came to realize that though baking got me interested and I considered my short run at it as successful, I didn’t love doing it. I think I enjoyed eating the sweet treats instead of making them. That is how I switched my interest to cooking. I loved the freedom of it, the ability to wing it and any mistakes with cooking could more often be fixed unlike baking where the science of it all is extremely important.

Baking Creates memories.

At university, there was a semester dedicated to baking and cooking. That was my first time having orange nut cake. I felt so proud of myself for making something so delicious from scratch. Growing up we would make prepackaged treats from Betty Crocker. However, as I grew older my mother would include me in the bigger baking moments and share some of her recipes with me for some of our classic Jamaican desserts. The popular ones are Christmas Fruit Cake, banana bread, potato and bread pudding.

This Orange Nut Cake made such an impression on me that years later I willed myself to try and remember how to make it. Needless to say I made quite a few errors as my memory of the ingredients and measurements were not as clear as the memory of loving the cake. I tried and tried again until I found a good middle ground. The texture is not quite what I remembered it to be but it sure is good and that is everything I could want.

When my Mother passed away a few years ago I created a little notebook to add all her recipes and the ones we created and loved. Recently I went through some of my old things and found the notebook and there it was. The recipe for Orange Nut Cake. I decided to make it and share it with you so that you can also share the joy it brought me. 

How to make Orange Nut Cake?

Start by getting all your ingredients. Baking flour, bread crumbs, baking powder, baking soda, milk powder, granulated sugar, walnuts, orange juice, eggs, vegetable oil and water. You will mix your dry ingredients first, then your eggs separately and then incorporate the dry mixture into the egg mixture. After that you’re close to the finish line. 

So now that we know what we need. Lets get cooking.

Ingredients

  • 3/4 cup Bread Crumbs (Pantry Item)

  • 3/4 cup Baking Flour (Pantry Item)

  • 1 1/8 cup Granulated Sugar (Pantry Item)

  • 1 1/4 tsp. Baking Powder (Pantry Item)

  • 1/2 tsp. Baking Soda (Pantry Item)

  • 1/8 cup tsp. Milk Powder

  • 2, Eggs (Pantry Item)

  • 1 tsp. Orange Rind

  • 3/4 cup vegetable oil (Pantry Item)

  • 1/4 cup Orange Juice

  • 1/4 cup Water

  • 1/2 cup Walnuts

Directions

  • Preheat oven at 350 degrees.
  • Combine bread crumbs, baking flour, granulated sugar, baking powder, baking soda and milk powder for 1 minute on speed 2.
  • Beat eggs then mix in the flour mixture to the eggs gradually on speed 1.
  • Stir in the oil, orange juice, orange zest and water. Lastly stir in the walnuts.
  • Grease and flour two 4’x 6″ loaf tins. Pour the mixture in the tins and bake at 350 degrees until done. Around 45 minutes.
  • You can check the middle of the pan with a tooth pick for readiness.
