This Homemade Chicken in Black Bean Sauce will definitely transform your weeknight dinner. If you’ve been following me for awhile then you know I love Chinese Food. I’ve been eating in a lot more since the start of the pandemic and thankfully that has drastically taken some pressure off my purse strings. So what do you do when you’re craving some of your favourite foods but trying to eat out less? Make it at home and surprise yourself.

I’ve been in an exploratory mood lately when grocery shopping. If you pay close attention you’ll find some really great treasures that were hidden only because we don’t look closely. I saw a jar of Lee Kum Kee black bean and garlic sauce and was immediately inspired to make my own version of my favorite Chinese fast food.

One of the best things about Jamaica is the diversity in the foods available. Jamaica being the melting pot that it is, you’ll find so many different cultures here and with it, great food. Jerk, Chinese, Indian, Japanese, Italian, Lebanese, Vietnamese, if you can think it then it’s probably here. Even if it’s a little hole in the wall. Some of those restaurants you find the best and most authentic food.

What do you need for Homemade Chicken in Black Bean?

This Homemade Chicken in Black Bean is my version and I’m sure it doesn’t have nearly all the things that go into their traditional dish. However, the Black bean and garlic sauce goes a long way to tasting authentic. A few simple ingredients is all you need. The Lee Kum Kee black bean sauce, boneless chicken thighs or breast, thinly cut. Onions, scallions and garlic and a nice bowl of hot Jasmine rice.

Let’s turn that boring weeknight meal to a Friday night delight. Let’s get cooking.

Ingredients

  • Deboned Chicken thighs 5-6

  • Lee Kum Kee Black Bean & Garlic Sauce, 1 1/2 tbsp.

  • Scallion, 2 stalks, chopped i 1 inch sections (Pantry Item)

  • Small Onion, julienned (Pantry Item)

  • Salt 1/4 tsp. (Optional)

  • Black Pepper, 1/4tsp. (Pantry Item)

  • Onion Powder, 1/2 tsp. (Pantry Item)

  • Vegetable oil, 2 tbsp. (Pantry Item)

  • White Rice (Pantry Item)

  • Garlic Powder 1/2 tsp (Pantry Item)

  • Garlic, 4 cloves, minced (Pantry Item)

  • Water 1/2 cup (Pantry Item)

Directions

  • Cook Rice according to package instructions.
  • Wash Chicken with lime or vinegar and rinse. Cut into thin strips.
  • Season with salt, pepper, garlic powder, onion powder and set aside.
  • Heat a large pot with oil on medium to high heat. Add onions and garlic and sauté until fragrant.
  • Add chicken strips to the pot and stir-fry for 10 minutes.
  • Add black bean sauce, scallions, water and sauté, cooking for 5 minutes on low. Do not let it dry out too much.
  • Serve with white rice.
