This Egg & Chorizo breakfast quesadillas makes breakfast time the best meal of the day. They say breakfast is the most important meal but I hate making it. I would sooner sacrifice breakfast for 10 more minutes of sleep. This is not a good thing but it’s a reality. I struggle with making breakfast.
With that said I do try to challenge myself to make breakfast on the weekends. I keep myself motivated by making something fun, interesting and flavourful and this breakfast quesadilla checks off.

  1. It’s really easy to make. It seems like a lot of moving parts or mechanics but really it’s very simple. The preparation time is minimal.
  2. It’s absolutely yummy. Spicy and flavourful delicious bites of Chorizo, fluffy egg scramble molded together by melted cheddar in a flour tortilla. It doesn’t get batter than that.
  3. It’s fun for you and the family to make. The hassle of making breakfast can often be minimized if you have help. If you’re making this for you family, let them help out. There’s a task here for everyone.

How to make Egg & Chorizo Breakfast Quesadillas?

Start by prepping some of your ingredients. Chop your chorizo and onions and whisk your eggs. In one frying pan you’ll sauté the onions and garlic in in vegetable oil then add the chorizo. Season with the paprika and chili powder and sauté until nicely browned then remove from heat. Add more oil if necessary and then add eggs and scramble. Remove the eggs and set aside. In another pot Add butter or margarine to the pot. Place the tortilla in the pot then top with cheddar cheese. Layer sausage, eggs, tomatoes, onions and then fold over the tortilla and press down. Cook on that side for a minute then carefully flip to the other side. Cook on that side for a couple minutes then remove from the stove. Cut two three and repeat the process.

Ingredients

  • 2 Large Tortillas or wraps

  • 1 Chorizo Sausage Link

  • 3 whole eggs

  • Vegan Shredded Cheddar Cheese

  • 1 medium onion chopped. (Pantry Item)

  • 1-2 tsp. Minced garlic (Pantry Item)

  • 1/2 tsp. Chili Powder (Pantry Item)

  • 2 medium tomatoes diced. (Pantry Item)

  • Salt & Pepper to Taste (Pantry Item)

  • Vegetable oil (Pantry Item)

  • a Splash of milk, optional

  • 1/4 tsp. All purpose (Pantry Item)

Directions

  • Dice your chorizo, onions and garlic and store in separate bowls. In a medium sized bowl add eggs, salt, pepper and a splash of milk and whisk.
  • Heat a frying pan on medium with vegetable oil. Add onions, minced garlic and sauté until fragrant then add the chorizo. Season with the all purpose and chili powder and sauté until nicely browned then remove from heat.
  • In the same pot add more oil if necessary and then add eggs and scramble. When cooked, remove the eggs and set aside. In a clean and dry frying pan, add margarine to the pot. Place the tortilla in the pot then top with cheddar cheese. Layer sausage, eggs, tomatoes, onions and then fold over the tortilla and press down. Cook on that side for a minute then carefully flip the tortilla. Cook for an addition 2 minutes then remove from the stove.
  • Cut the quesadilla in three parts then repeat the process to make more.
