I am really excited about challenging myself to make recipes that are full meals on a low budget. There are a lot of simple yet really delicious meals that can leave you feeling full and easy on the wallet. I find that some of the best meals come from whats considered humble origins. Theres something deeply comforting about it. Whats really important is that its delicious, filling and affordable.

Its so easy! If you have 15- 20 minutes to spare then you’re in luck because that’s all the time you need. Whether a long day working from home or on the road this save on time and effort. This recipe serves two so you can make this for yourself and have enough for the next day or share this will meal with a friend or family member.

Its so delicious! Curry is one of my ultimate favourite spices. Its so rich, fragrant and flavourful. In my opinion there are very few things that curry cant make better. When you think canned mackerel you think tomato sauce but that’s so typical. Mackerel in brine doesn’t get the feature it deserves for being extremely versatile. You can have it pickled, curried, sautéed and more. The star of this dish is the curry and the scotch bonnet pepper. If you’ve been following my blog yhen you know I rarely cook without scotch bonnet pepper. Great flavour and heat, whats better than that? These flavours work really well to complement the mackerel and even toned down the rawness associated with fish.

Its so affordable! As the category suggests this is a low budget meal. Don’t you just love that? everyone loves saving whether you’re forced to because your low on funds or just like to stay in your financial lane on occasion, fret not because good food can come not cheap but affordable. This meal minus a couple pantry item ingredients will cost no more than $500 JMD. I say small wallet meals for the win.

Ingredients

  • 1 can Mackerel in brine 7.5oz

  • Vegetable oil 1-2 tbsp. (Pantry item)

  • Medium onion sliced (Pantry Item)

  • 5 Pimento (Pantry Item)

  • Garlic, 3 cloves mashed (Pantry Item)

  • Scotch bonnet pepper sliced (Pantry Item)

  • Salt, to taste

  • All purpose 1/2 tsp. (Pantry Item)

  • Onion Powder 1/2 tsp. (Pantry Item)

  • Curry Powder 1tsp. (Pantry Item)

  • Rice, 1 cup

Directions

  • Cook Rice according to instructions.
  • While rice cooks heat oil and curry on medium heat in a frying pan.
  • Add onions and garlic and sauté for 2 minutes.
  • Drain mackerel and crush to smaller chunks and add to the pot. Top with pepper, onion powder, pimento and all purpose seasoning and mix well.
  • Add a little water (about 1/4 cup) and cook for 10-15 minutes. Salt to taste if necessary.
  • Serve hot with Rice.

Notes

  • Be careful to not burn the curry.
