What’s in the Cheesy Beef Stuffed Peppers?

I kept mine simple with ground beef and corn then topped with cheese and baked to a melted perfection. There are however a lot of options to consider for the stuffing. For starch you can try, potatoes, sweet potato, stuffing, mashed potatoes, black beans or pumpkin. For the meat you could try minced chicken or pork, sausage, tuna, canned salmon or shrimp.

Consider making different types so that you’re catering for everyone’s needs. I would suggest a sausage and potato mix, ground beef and black bean, tuna and cheese, and a pumpkin and cheese dip stuffed in the peppers. These are four great options and everyone is likely to be happy.

Cheesy Beef Stuffed Peppers

This dish will not be the main dish. Whether appetizer or side dish you want to keep them at small sizes so that they don’t fill everyone up too much. Pick small sweet peppers, rinse and cut them in half. Carefully remove the core with the seeds and then stuff the cavity with your stuffing mixture of choice. Top with cheese and pop them on a tray that’s lined with foil and bake at 350 degrees until the cheese has melted to perfection.

Ingredients

  • 3, Bell or Sweet Peppers

  • .280kg Beef Mince

  • 1 small Canned Corned

  • 1, medium onion chopped (Pantry Item)

  • 2 tsp, minced garlic (Pantry Item)

  • 1 tsp. Soy Sauce (Pantry Item)

  • 1 tsp. Salt (Pantry Item)

  • 1/2 tsp. All Purpose (Pantry Item)

  • 1/2 tsp Chili Pepper (Pantry Item)

  • 1 cup Mexican Blend Shredded Cheese

  • 1 tbsp. Vegetable Oil (Pantry Item)

Directions

  • Season beef mince with soy sauce, salt, all purpose, garlic and chili pepper.
  • Heat oil in a large pot on medium high. Add beef to the pot and sauté for 5 minutes. Keep stirring to break up any clumps. Add onions, cover and cook for 15 minutes.
  • Add Corn and continue to cook for another 5 minutes then remove from the heat.
  • Heat oven at 350 degrees.
  • Wash peppers and cut them in half. Carefully removing the pit with the seeds to create a cavity.
  • Spoon Beef mixture in the cavity and top with cheese.
  • Baked uncovered for 10 minutes or until the cheese is melted.
